Rocco Torro is crafting a South African Agave Spirit with Global Ambition

In the arid heart of the Karoo, a quiet revolution is taking place. At the forefront is Rocco Torro, a proudly South African brand redefining what locally produced agave spirits can achieve.

Agave Spirits vs Tequila: What’s the Difference?

Jonathan says, “At a glance, all tequila is agave spirit, but not all agave spirits are tequila. The distinction lies in strict geographic and production regulations. Tequila can only be produced in designated regions of Mexico, primarily in the state of Jalisco, and must adhere to tightly controlled standards.”

To legally be called tequila, a spirit must:
– Be produced in specific Mexican regions
– Be made primarily or entirely from Blue Weber agave
– Follow regulated production processes
– Be certified by Mexico’s governing bodies

Agave spirits, on the other hand, can be produced anywhere in the world using various agave species. This gives producers like Rocco Torro the freedom to innovate while still respecting the core principles that make tequila exceptional.

The South African Difference: Bigger Plants, Longer Patience

In South Africa, agave tells a very different story.

“Rocco Torro’s spirit is made from Agave Americana, a species that thrives in the Karoo’s harsh conditions. Unlike the Blue Weber agave used in tequila, which matures in about six years and yields a piña, which is the heart of the plant, weighing roughly 35kg, Agave Americana takes a remarkable 20 years to mature but produces a piña that can weigh up to 200kg,” explains Jonathan.

This extended maturation period and larger plant size contribute to a distinct flavour profile, one that reflects both time and terroir.

The epicentre of South African agave cultivation is Graaff-Reinet, where an estimated three million agave plants grow within a 50km radius. It is here that Rocco Torro sources its raw material, carefully selecting only mature plants ready for harvest.

A Premium Spirit Rooted in Craft

Jonathan adds, “What sets us apart is our unwavering commitment to quality. While it cannot legally be called tequila, our Agave Spirit follows the same guiding principles. The spirit is made from 100% agave and is bottled on the premises, an important hallmark of premium tequila production.”

Chatting with Jonathan it is obvious that he is an artist by nature and a perfectionist by trade. His passion for craftsmanship is evident in every step of the process. From identifying ripe agave plants in the veld to overseeing harvesting, distillation, and bottling, he and his team are involved end-to-end.

In true perfectionists’ style, Jonathan says that they are a ‘single spirit distillery’, with the sole focus on agave spirit and no diluting of focus on other spirits such as rum or gin.

“We are also unique in that we are the only distillery that processes from the harvesting field to final bottling,” says Jonathan.

The distillery employs the direct steam method, which is favoured by some of the best tequila producers globally, to extract sugars from the agave. The spirit is then aged for three to four months in oak barrels, qualifying it as a Reposado agave spirit. The minimum storage period in an oak barrel for a tequila or agave spirit to qualify as a Reposado is two months.

The Influence of Oak: American vs French

“Rocco Torro offers two distinct Reposado expressions, each aged in a different type of oak namely American Oak, which tends to impart vanilla, caramel, and subtle sweetness and French Oak, known for adding spice, structure, and a more complex mouthfeel,” says Jonathan.

Both are exceptional, but the difference is noticeable. In my humble opinion, the French Oak expression has a slight edge, it aligns more closely with my palate, offering a refined and layered tasting experience. You need to sample both to know which you prefer.

A South African Spirit with Global Parity

One of the most remarkable aspects of Rocco Torro is how closely it rivals established tequila brands. In blind tastings, it is often difficult to distinguish it from premium offerings like Don Julio and Espolòn. Yet, it retains a unique South African signature that is shaped by local agave, climate, and craftsmanship.

Looking Ahead: Añejo and Beyond

Jonathan’s ambitions don’t stop at Reposado. “The team is preparing to launch an Añejo agave spirit, aged for a full year in oak barrels. Beyond that, an Extra Añejo expression, aged for three years, is also on the horizon. These longer-aged spirits promise even greater depth, complexity, and character,” says Jonathan with a broad smile.
